Marinate the meat with salt, pepper, and herbs a few hours before.
Peel two apples and divide them into halves.
Put the meat on a baking pan with aromas, apples, and oil.
Cook for about three hours on medium-low heat. Turn it several times. Halfway through cooking, pour in the wine. When cooked, drain the meat and let it cool. Peel and slice the other apples into thin slices, sift the cooking juices, add the raw apples, and keep warm. Cut the meat into thin slices, dress them with the cooking juices and the raw apples, then serve.
