B.<br \/>\nGrobes Salz n. B.<br \/>\n1 Glas Conegliano Valdobbiadene Prosecco Superiore DOCG<br \/>\n180 g Vollmilch<br \/>\n20 g Grana Padano DOP<br \/>\nSchwarzer Pfeffer n. B.<br \/>\n195 g Natives Oliven\u00f6l extra<br \/>\nPetersilie n. B.<br \/>\n500 g Maismehl<br \/>\n2 l Wasser<br \/>\n1 Essl\u00f6ffel grobes Salz<\/p>\n<\/div><div class=\"fusion-clearfix\"><\/div><\/div><\/div><div class=\"fusion-layout-column fusion_builder_column fusion-builder-column-2 fusion_builder_column_1_2 1_2 fusion-one-half fusion-column-last\" style=\"--awb-padding-right:30px;--awb-bg-size:cover;width:50%;width:calc(50% - ( ( 4% ) * 0.5 ) );\"><div class=\"fusion-column-wrapper fusion-column-has-shadow fusion-flex-column-wrapper-legacy\"><div class=\"fusion-text fusion-text-2\" style=\"--awb-text-transform:none;\"><p><strong>Zubereitung<\/strong>:<br \/>\nDen Stockfisch etwa drei Tage lang einweichen und dann eine Nacht trocknen lassen.<br \/>\nDie Zwiebel hacken und die Sardinen gr\u00fcndlich absp\u00fclen. Zusammen mit der Zwiebel und ein paar Tropfen Oliven\u00f6l in eine Pfanne geben und das Ganze umr\u00fchren. Etwa 50-60 Minuten auf kleiner Flamme kochen lassen, bis sich die Sardinen aufgel\u00f6st haben und die Zwiebeln gut angebraten sind.<br \/>\nDas eingeweichte, entgr\u00e4tete und ausgelegte Filet mit unversehrter Haut nehmen. Einen Teil des Zwiebelgemisches auf eine H\u00e4lfte geben, mit dem groben Salz und einer Prise Pfeffer w\u00fcrzen.<br \/>\nMehl dar\u00fcber streuen, den Stockfisch wieder \u00fcbereinander klappen und in etwa 6 cm breite St\u00fccke schneiden.<br \/>\nDen Boden des Topfes mit der H\u00e4lfte des Zwiebelgemisches bedecken und die Stockfischst\u00fccke darauflegen. Mit der restlichen Zwiebel bedecken, etwas Mehl dar\u00fcber streuen, salzen, pfeffern, Grana Padano hinzuf\u00fcgen und dann mit Milch und Conegliano Valdobbiadene Prosecco Superiore DOCG aufgie\u00dfen.<br \/>\nEin paar Tropfen Oliven\u00f6l hinzuf\u00fcgen und den Stockfisch vollst\u00e4ndig abdecken. Etwa 4-5 Stunden auf kleiner Flamme ohne \u00fcberm\u00e4\u00dfiges R\u00fchren kochen lassen.<br \/>\nIn der Zwischenzeit die Polenta zubereiten: gesalzenes Wasser zum Kochen bringen und nach und nach das Maismehl unter st\u00e4ndigem R\u00fchren hineingie\u00dfen. Auch 15 g Natives Oliven\u00f6l extra hinzuf\u00fcgen und das Ganze unter st\u00e4ndigem R\u00fchren f\u00fcr 50 Minuten kochen lassen.
